You are looking at an NFORCE 590 for Intel reference mainboard from NVIDIA. The CPU is a Core 2 Duo E6600, and the grey matter is thermal paste.
Only use a few drops of the supplied thermal paste and smear a thin layer over the processor. I usually wrap a little plastic bag around my finger and this way can very evenly distribute the thermal paste.
Below we see the processor prepped. Now don't forget to remove that layer of plastic protection foil from the waterblock. Now we open up the bracket kit.
Obviously we choose the Socket LGA 775 kit as we are using a Core 2 Duo CPU today.
