I'm a little confused as to why the UD5H gets a 12 phase VRM, but the higher end boards (including the OC specific SOC Force) only get an 8 Phase VRM. Am I missing something here?

If you have spare 27 minutes look for "Motherboard VRM Explaination Part1: The VRM and PWM" on a youtube. It will explain why 8-phase might be better than 12-phase VRM. Sorry, I can't paste you the link as I need to write 10 posts before I am allowed to. I have registered especially to answer your question because it is indeed very interesting question.

By Asus ROG vs Standard, although std. deluxe versions have hybrid ROG/std. VRM, not quite as ROG but not totally mainstream. ROG has higher quality VRM with more amperes and needs less to achieve same efficiency. I think its the same by Gigabyte.
