the definition and role of "server" has been in a dynamic flux
both AMD & Intel sell professional grade workstations. all of Intel's falls under the rubric of "server" as that is how Xeon is sold.
AMD has TR & Epyc. both can be used as servers, but TR is more user friendly.
the workstation market is very nebulous (after all you can have a workstation with a 5950x) but it is controlled by AMD overwhelmingly with TR. TR has made huge inroads in the scientific workstation community as well as the consumer and film production markets. Intel's HEDT never made much of an inroad in these markets as the Xeon options were plentiful and the Intel HEDT mobos limited by lack of ECC compatibility.
with AMD you can run ECC on Ryzen, let alone TR.
