I'm trying to decide on a new monitor currently. I know I want a 27 inch with 144hz, but not sure if I should spend the extra on 1440p.

It depends ! I was stuck with FHD for over 10 years now . So for me I want 1440p.
Another FHD for me is not an option . But keep in mind for 1440p and 144hz you need a good videocard, depending on what games you play. Somethin in the lines of 2070 S - 2080 , 3xxx etc.

Assuming new monitor will last 10 years, 4K would be more future proof.
GeForce RTX 2080 Ti can do 90 FPS and Radeon RX 5700 XT can do 66 FPS in nice looking games like Strange Brigade on Ultra Quality on 3840x2160 resolution now.
If performance of hardware is improving 30% per year then medium-high end GPU will do 200-280 FPS on Ultra Quality on 4K monitor in 5 years.
If you add eye tracked rendering technology to monitors then you will hit FPS limits much sooner.
